Sick soup

The weather has only just turned cold and I got sick earlier this week. I took a day off and conveniently I was at my parents' so I raided their fridge. Used all the veggies I could find and threw them in a saucepan to make a soup!

Ingredients

  • 1 king brown mushroom, sliced
  • 1 onion, diced
  • 3 cloves of garlic, crushed
  • 1 carrot, diced
  • 1 stalk of celery, diced
  • 3 tomatoes, diced
  • 1 small chilli, sliced
  • 1 block bean curd (hard tofu)
  • 1 handful of green beans, halved
  • 1/2 cup pasta
  • 1 egg
  • 1 litre water/stock
  • salt and pepper to taste

Fry off the mushrooms and set aside. Brown onions, then add crushed garlic, diced carrot and celery. Once fragrant and the veggies are soft-ish, add in tomatoes and chilli.

When the tomatoes have softened, add water and stir. Once bubbling add green beans, tofu and pasta and leave on stove until pasta is al dente. I actually added about a tablespoon of sriracha because I couldn't help myself

Turn off the heat, crack and egg on top and once the whites have set, serve. Try to keep the yolk intact ;) I made a grilled cheese as well hehe.
