Some non-Eastern dumps that I made...
The dough recipe is just one from Jamie... I did actually use 6 eggs, but it made a tonne.
- 6 eggs
- 600g flour
- 250g ricotta
- as much chopped spinach as you'd like... but I'd guestimate half a cup
Mix eggs and flour together and knead until it's smooth and elastic. I pulsed it in the food processor and tipped it out onto the kitchen bench. It kind of looked like sand. After kneading, wrap and chill in the fridge for at least half an hour.
As dough is chilling, make your filling. I made way too much filling so maybe don't buy 500g worth of ricotta unless you want to feed a village. This is just spinach and ricotta that's been blended.
Roll out with pasta machine and cut circles.
Fill 'em up and wrap, but remember not to overfill. Line them up on a tray and freeze if you want to save for a future date, or throw them into boiling water. The choice is yours.
