Someone make a pillow as soft as these gnocchi. Based on this recipe.
- 1kg potatoes (tbh I didn't weigh, just eyeballed it)
- 200g plain flour
- 1tsp salt
- 1/4 cup of nutritional yeast
- 1 egg
Boil potatoes until you can slide a knife through. Make sure not to overcook. You don't want waterlogged potatoes. It'll take 15–20 mins.
Mix flour, salt and nutritional yeast together. I didn't have parmesan, so I substituted with nutritional yeast.
Thoroughly mash potatoes
Pass mashed potatoes through sieve. It'll take a while and your arms will burn.
Add potatoes and egg to flour mix and combine. Don't overdo it, you don't want to activate the gluten too much.
Roll out to ropes around 1cm thick, then cut off in sections 1.5–2cm long. You could roll them down a fork, but not necessary.
Bring salted water to the boil and then drop the gnocchi in. Drain when they're floating. I picked a lemon from our tree (for zesting later). Look how big it is!
